Salade Nicoise
Ingredients
- 4 ripe tomatoes
- 200 g boiled French beans
- 4 hard-boiled eggs
- 2 160 g cans of tuna in olive oil
- 1 red onion cut into fine rounds
- 4 tablespoons of extra virgin olive oil
- 12 capers
- 20 Taggiasca olives
- 4 fillets of salted anchovies
Procedure
Cut the tomatoes into slices and set them out on a dish. Cover them with the French beans, the tuna fish (drained) and the red onion rings. Decorate with the capers and olives, place the quartered eggs around the edge, add the anchovy fillets and drizzle all round with the olive oil.
